Re the tomato post yesterday, I also got a very ripe avocado yesterday from our very generous client (we split the good stuff three ways!) so it got me thinking… what to make? Guacamole, but of course! It’s Friday and we always have a cocktail or two on Fridays, and I never serve booze without some food. Cocktails are usually at 5:30-6 on a Friday, 4-5 on a Saturday!
Ingredients:
- 1/2 very ripe avocado
- 2-4 tbsp lime juice
- 1 tbsp finely grated garlic
- 1/4 cup chopped cilantro
- 1/2 finely chopped jalopeño pepper reserve about a 1/2 tsp for garnish)
- Salt to taste
Directions:
- Put everything into the jar of an immersion blender and blend until smooth. Garnish with reserved jalopeño.
- Serve with crackers.

Guacamole is definitely a favorite of mine and your recipe is a good one. I made my first batch many years ago and haven’t bought it since. I’ll take homemade anything over store bought, any day.
So true, John! I find the store bought guacamole has a chemically taste. And it’s so easy to put together. If you are a fan of scallops, this guacamole pairs very well with butter seared scallops! Drizzle the brown butter from the pan on the scallops and avocado – you’ll be surprised how delicious it is!
You have set cocktail hours. I think I love you! Greg and I like our guac simple like this. He usually doesn’t put in garlic, but I think that’s my call! He loves garlic in everything. Also, your bowl is really cool. Did a local artist make that. I see them all the time and have wanted to splurge on a nice one, but just haven’t.
Thanks for noticing the bowl Katharine (and welcome!). It’s actually a Provence artisan made mortar and pestle. I splurged a few years ago in Marseille. It’s made out of knotty olive wood! It’s one of my most favourite souvenirs!
