Serves 1-2
- 1 can 170g Albacore Chunk Light Tuna in Water
- 1 green onion, finely chopped
- 1/2 green chilly, finely chopped
- 3-4 tbsp chopped cilantro
- 1 stalk celery, finely diced
- 1/2 an apple, finely diced
- 1/4 cup lime juice
- 1 tsp low sodium soy sauce
- 1 tsp finely minced garlic
- 1 tsp finely minced Ginger
- 1-2 cups of arugula and spinach mix
- 2 Campari tomatoes, cut into sixths
- 2-3 radishes, finely sliced
- 10 slices cucumber
- Lightly toss the first six ingredients together, carefully so the tuna is still a bit chunky.
- Mix the next four ingredients well (lime juice to ginger).
- Toss the arugula, tomatoes, radishes and cucumbers. Divide into two servings, if you please. Scoop the tuna mix evenly over the salad portions.
- Evenly pour the lime juice dressing over the tuna and salad portions.
- Enjoy.
