JT came up with this recipe because we are trying to eat more fish.
It’s delicious! Even the lemons are delicious!
Serves 4
- 400 g Halibut
- 1/2 red pepper sliced thinly
- 1/2 yellow pepper sliced thinly
- 1/2 small sweet Vidalia onion sliced thinly
- 2 cloves garlic minced finely
- 1 lemon sliced thinly
- Juice of 1 lemon
- 1/2 cup LS chicken stock
- 1 tbsp olive oil
- Pre-heat oven to 350F.
- Heat olive oil in a cast iron pan. Add onions and sweat for a minute. Add peppers and cook for a minute or so. Remove from pan and set aside.
- Add Halibut skin-side down and cook for 2 minutes.
- Mix chicken stock, lemon juice and garlic together.
- Place lemon slices all over the Halibut. Scatter the onions and peppers over the fish.
- Pour lemon juice stock mix over Halibut and place in the pre-heated oven for 15-20 minutes, until fish is cooked through.
- Serve on a bed of greens.
