Happy Thanksgiving to all my American friends! And anyone else who happens to celebrate Thanksgiving now. Hope you enjoyed an overload of turkey, stuffing and pies! And then there’s Black Friday, which for some reason Canadian retailers have jumped on and are promoting the heck out of it! Get out there and get some GREAT DEALS, but not before you leave me some of your lovely words.
Honestly, I don’t eat sweets. I just like to bake ’em! And fortunately, JT started a new job (and career) in June and his office are the perfect guiney pigs recipients of my baking! I wanted to bake another batch of the molasses spice cookies, but JT put in a request for something chocolate. OK, I can live with that. The cookies lasted less than one hour and JT only had two. He came home with a request for the next bake: macarons! Can you believe it?
The recipe is an adaptation from the wonderful Chocolate Crinkle Kisses I make every year at Christmas, but since it’s not Christmas yet (unbenounced to many department stores who are playing Christmas music incessantly) I altered the recipe to be a Chocolate Espresso flavour and I omitted the Candy Cane Kisses!
These cookies have a strong coffee and chocolate flavour and it’s texture is a little browny like.
Chocolate Espresso Crinkle Cookies
Makes about 30-36 cookies
Ingredients:
- ½ cup icing sugar
- 3/4 cup melted butter
- 1/2 cup unsweetened cocoa powder
- 1/4 cup espresso powder
- 1 cup sugar
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsps vanilla extract
- 1/2 tsp salt
- 2 large eggs
- 6 ounces semi-sweet chocolate chips
Directions:
- Sift icing sugar into a small bowl.
- In a large bowl, mix the melted butter with the cocoa powder, espresso powder and sugar.
- Using an electric mixer, beat the eggs and vanilla Into the chocolate mixture.
- Slowly mix in all the dry ingredients until combined. Stir in the chocolate Chips.
- Cover and refrigerate about 2 hours.
- Preheat oven to 350°F. Roll dough into a small ball about the size of a walnut; roll balls in the icing sugar and press flat with the palm of your hand.
- Place on parchment covered baking sheet, leaving about 2 inches between the cookies. Bake 8-10 minutes.
- Let the cookies cool on the sheet; transfer to racks to cool completely before storing.

These are so gorgeous, Eva. They are so glossy looking. I can imagine how good these must taste. It seems to me that Christmas is being celebrated earlier and earlier every year. We never used to put our decorations up until a week before Christmas but now, if you don’t have them up by December 1 the neighbours are banging down your door wanting to know why xx

JT’s office surely loves you Eva! That’s a great way to get your fill of baking, but not have sweets lying about. You know I’m not one for chocolate, but Mr. N is reading over my shoulder and he thinks these look good. 🙂

Lovely cookies Eva, and once again you’ve succeeded in making them very crinkly, which I consistently seem to fail at for some damn reason! Could you clarify something? – When you say “espresso powder”… what exactly is this? Do you mean ground coffee beans, like Lavazza or Illy or something, or do you mean instant stuff?

Thanks Charles, espresso powder is instant espresso, I shall correct it in my post. My Mom brought some back for me from Cuba years ago, and I used it for baking. When I ran out, I check my grocery store and discovered that Nescafé makes it here, so I was able to get some. I only use it for baking.

Thanks David, we celebrated our Thanksgiving the second Monday of October. We generally have turkey at Christmas too!
Moreish is a word I’ve read only from UK and Australia and New Zealand, we just don’t use it here, but it sounds cool!

“unbenounced to many department stores…” heehee, I’m one of those early celebrators too so I can’t complain about the obnoxious Christmas music that starts in department stores on Nov. 1 ;-). Eva, chocolate + espresso is all I needed to hear. I’M IN!! (twice). Love these….and might make some this weekend if I can squeeze them in time wise. They look delightful too.

I have no idea how you have obtained such perfect, beautifully crinkled cookies, but I would happily devour several of these! I often add instant coffee to chocolate cakes and other chocolate desserts, so I’m sure I would love your cookies too.

Eva, you really have a knack for these crinkled cookies… These are beautiful. Hey if you put together a Christmas tray, what goes on it? If you make one you owe it to your readers to take a photo of it… What do you consider an essential component or do you change it year by year?

Thank you kindly Zsuzsa, I have several things I put on the list, and yes, I have taken photos in the past and will do so again. I will try to add new recipes to change it up a bit, but there are the old favourites that I have to keep. It seems that each year I have documented my baking since 2007, the volume has been reduced, mostly I think people are not as keen on eating sweets these days or maybe I’m just not as keep on having them in the house. 😉

Thanks Sawsan, I would actually cut the espresso down or out entirely for kids, it may be a little too strong and caffeinated for them. But I am very pleased you are even considering baking them.

I made these today and they were amazing! the kids really loved them and said that they tasted like brownies 🙂 I took your advice and reduced the espresso to 1 teaspoon.. I also added some cinnamon and cardamom and they were a hit! I will be making them again and again..thank you for the recipe
