I’d like to apologize, this post was so unprofessional; when I left it last night, everything was done and it was timed to release this morning, as all my posts do. But for some reason, while eating my grapefruit and blueberries this morning, I decided to check it again on my phone and discovered a small typo at the beginning of the post, so I fixed it; unbenounced to me, I hadn’t refreshed the post on the phone to sync with the server, so what I actually did was update an older post, thereby overriding the actual post. ARGHHHHHHH! When I finally saw Norma‘s tongue in cheek comment later that morning, I realized my extreme faux pas. That’s what I get for using multiple devices to update my blog. I shall be ever more careful in the future, thanks Norma for calling me out. My punishment (well, other than mortal embarrassment), is to have to retype the entire post with the exception of the intro below. Now I’ll go stand in the corner.
I know there are many of you who, how shall I say this delicately, can’t stand to be in the same room as coconut, but here chez kitcheninspirations we love the stuff; the taste, texture, colour, aroma (makes me think of a beach vacation), we LOVE it! So this will not be the last coconutty thing we make, and unfortunately, you won’t be able to leave it out as it’s such an integral part of the recipe. So fasten your seat belts and prepare yourself for a chewy, lemony treat!
Chewy Lemon Squares
From Company’s Coming Squares by Jean Pare.
Makes 1 pan 9″ x 9″
First Layer Ingredients:
- 1 1/2 c all purpose flour
- 1/4 c granulated sugar
- 1/2 c butter
First Layer Directions:
- Preheat oven to 350°F.
- Crumble flour, sugar and butter until mealy (you can save time and pulse this in a food processor, metal; blades)
- Press into ungreased 9×9 inch pan. Bake for 20 minutes.
Second Layer Ingredients:
- 2 eggs
- 1/4 cup lemon juice
- 1 c granulated sugar
- 2 tbsp all purpose flour
- 1/2 tsp baking powder
- 1 1/2 cups flaked, unsweetened coconut
- 1/4 tsp salt
- 1 tsp lemon essence
Second Layer Directions:
- Beat eggs slightly. Stir in the rest of the ingredients.
- Spread over shortbread base. Bake at 350°F for additional 30 minutes, until set in the centre and golden in colour.
- Cool and cut into squares, or bars.

I’ve totally wiped out a post on blogger by using my phone to edit…so I feel your pain! But these lemony coconut bars are a wonderful distraction. Coconut desserts even outrank chocolate in my opinion!!!! These sound incredible~

Amazing idea! Lemon and coconut are one of my favourite flavours in sweets, but I have never combined them… Everything called “chewy” instantly attracts my attention because I love chewy soft desserts (I usually hate floury heavy stuff). Your lemon and coconut squares already give me some ideas… I absolutely must try this pairing one day.
As for the small technical problems, I have them all the time…

Eva…., reading this note reminds me of how hard we can be on ourselves… all is good and no one would mistake you for unprofessional… although I can completely relate to the panic, rest assured these things can and do happen to all of us! And about these gorgeous, chewy looking squares, I for one love coconut almost as much as lemon so I’m all over this one!

I am a coconut-lover, Eva, so this recipe checks a few boxes for me! I think you’re right, it’s the chewy factor coconut adds to baking that I love. I think I have a few lemons waiting in the fridge too.. meyer lemons in fact.. perfect for this recipe!! Re the update.. I’m not sure how that works, I’m impressed that you can update from your phone.. and if it ever happens again, it wouldn’t bother me one little bit.. you are anything but “unprofessional” to me! I’ve been using my iPhone to update for years, it’s just so convenient! In the coming days you will see a post talking about how I can take a Photo with my iPhone and even apply my copyright on the photo, it’s so cool.

Hi Lorraine, I actually don’t like the interface for the iPad for WordPress, so I virtually never use it, but the iPhone app is actually quite robust. I just need to make sure I log out of my iMac so I’m updating the latest post!

Good thing I love coconut because these look scrumptious. Lemon bars with coconut, doesn’t get any better.

Hi Nazneen, I’ve been posting on my phone for a couple of years now, and for the most part, it’s pretty reliable. My problem occurred when I forgot to update a post to the server on my iMac and then did a little correction on my phone. But all is good now.
The lemon bars are one of my favourites!

Well…it’s good to be a late arrival to your most recent post because I’ve missed all the commotion. How frustrating to have lost your post! I do silly things with technical devices all the time. I’m having lots of trouble with the new wordpress system of uploading images. It’s taking so much longer than it used to. So annoying. Love the look of these and I’m a fan of coconut too xx

I wish I had your problem Eva… However, this is a cookie with a promise. I do have “pink sin” among my bar cookies, but it’s one of those things that you enjoy one bar and then you are done for a long, long time. However, since I am a lemon lover, I think I will have to give this one a try. I am also planning to put a magic bar with coconuts once I get back my kitchen that is. Major disaster happened when my dishwasher leaked and destroyed the guestroom below and now we are living with screaming machines until we dry out. I can barely get to my sink from the machines, one is actually called “the screamer” and of course, I have no working dishwasher. Restoration wanted to send out a plumber to put it back on Friday and we told them not to come back until after Christmas. We just want to be left alone for a few days.

Oh my, I am sorry that this happened, particularly so close to Christmas, I do hope everything works out for you. Touch wood, I have never had that happen to us, but that leak below our wine fridge continues so it may just be the dishwasher! JT will pull it out on the weekend and we’ll decide what to do. So annoying when things like that happen.
I really love this lemon square, the shortbread base is nicely contrasted by the chewy and lemony topping. Jean Paré adds a lemony icing on top, but I found this unnecessary, plus I’m not a big icing person. You can also add some lemon rind into the shortbread base, but I didn’t have real lemons around at the time (yes, I used bottled lemon juice). I’ll look forward to when you post your magic bars because that means everything is back to ‘normal’.

I am not one of coconut’s biggest fans but, I must admit, these do look good enough that I’d be willing to set aside my pride and give one, or three, a try. 🙂
I think WP has it in for us. I spent 2 hours tonight trying to get something accomplished in my next post and finally gave up. It is what it is. In other words, we’ve all been there, Eva. If misery does, in fact, love company, you should be feeling pretty good by now. Have a lemon square. 🙂

Thanks Angie, I have no idea how this happened, but I suspect I was updating it on more than one device and forgot to sign out. Darn, it’s a lot of work to put a post together and it’s very annoying to have to do it again. It’s an easy recipe, and I think you could substitute the flour for spelt easily.
