We’re all about cocktails and with cocktails you need hors d’œuvres, of course! These little bites are very tasty and rather refreshing and go great with a vodka martini. And the best part, you’ll have no spoons to wash because with this clever recipe your guests can eat the spoons!
Smoked Salmon Tartar in Endive Spoons
Serves 2
Ingredients:
- 60 g Smoked Salmon, chopped roughly
- 10 Endive leaves washed
- 1 tbsp chopped dill
- 1 tbsp chopped capers
- 1/2 chopped green onion, green part only
- 2-3 tbsp lemon juice
Directions:
- Mix all ingredients together well. Taste, season as required
- Spoon a small amount of the mixture into each endive spoon.
- Arrange on a decoratively shaped plate, refrigerate until ready to serve.

Endive can be a touch bitter so it’s nice to pair it with a strong flavour. If you use the smaller, lighter leaves they are less bitter. You can also slice them with a plastic knife (so they don’t oxidize) and add them to a salad for a bit of crunch. Strong blue cheese goes very well with it, as does a sweet-ish dressing or candied nuts. I hope you try it.

Beautiful appetiser, Eva! Although I don’t like salmon (unless it’s wild, but it’s so difficult to get…), I love endives and their slight bitterness and I’m sure it would please all my guests. Bookmarked for my future parties or dinners!

Thanks Sissi so much. I’m sure this would work very well with Tuna Tartare as well. I would be a bit concerned about refrigeration with the raw tuna, or better yet, you can make it into a ceviche and that ways it’s cooked.

This recipe is amazing and very new to me. I think the Vodka martini is a great suggestion, I might finally have some use for all my Russian vodka that I’ve collected during my trips there.
This is very easy to make as well, however I have one questions about the Endive leaves, are they available at supermarkets or are they a bit of a rarity?
I don’t think I’ve ever had them before, but then again I’m not exactly a salad connoisseur.
I’ll have to try this next time I have some friends over.

Hi Tudor, Belgian endive is rather common in North America, but the first time I ever saw it was in Switzerland about 20 or so years ago, so I would think that you would have it in the UK. I think sometimes it’s called Chicory, but it’s not the curly chicory but the one that looks like a bullet. It’s not quite a salad, so I thnk you would enjoy the crisp leaves against the soft salty flavour of the smoked salmon. Let me know if you enjoy it.
