It’s still blistery cold in these parts and we’re craving hearty foods. This was a recipe created because I wanted to make Naan again and I needed something Indian to go with it (I know, it’s usually the other way around, but I really wanted to eat test my new recipe again). It’s a lovely subtle curry with just enough spice to enhance the flavour and a wonderful creamy texture. I used coconut milk powder and water for the coconut milk in the recipe, but feel free to use the high fat canned stuff, I’m sure it will taste a lot richer. By the way, serve it with this Naan.
Coconut Chicken Curry
Serves 4, 100 g servings of chicken each
Ingredients:
- 400 g boneless skinless chicken breasts, cut into 2.5 cm or 1 inch chunks
- 1 1/2 tbsp vegetable oil
- 2 tbsp curry powder
- 1/2 onion, thinly sliced
- 2 cloves garlic, finely minced
- 4 tbsp coconut milk powder
- 400 mL or 14 oz warm water
- 1 tbsp tomato paste
- 1-2 tbsp lemon juice
- 1 tbsp sugar
- salt and pepper to taste
- 1/2 red pepper sliced thinly
- 1/2 green pepper sliced thinly
Directions:
- Heat oil and curry powder in a large skillet over medium-high heat for two minutes. Stir in onions and garlic, and cook 1 minute more. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear. Reserve chicken.
- Combine coconut powder and warm water and mix well.
- Pour coconut milk, tomato paste, lemon juice and sugar into the pan and stir to combine. Cover and simmer stirring occasionally for approximately 30 to 40 minutes or until the coconut milk reduces to a nice thick sauce. During the final 15 minutes, add the red and green peppers so they don’t overcook and the chicken to reheat.
- Serve with Naan.
What a lovely curry! We’ve been enjoying a lot of curry this winter as well. (I made butter chicken just last night). I love that this curry is lactose free.

I have a can of coconut milk that’s been sitting in the pantry for a while. I had meant to use it months ago, but we got derailed that night and never made what was planned. I think this may have been the reason we were derailed. I was supposed to save it for this delight which we’ll all LOVE. 🙂

Coconut and curry are one beautiful partnership, aren’t they? Happily things have warmed up here the last few days (now I just have to contend with lakes when I walk the dog rather than -30 wind chill – lol).

Ah Eva your fabulous naan again. I made magyaros kocsonya and I think naan would go with it. The curry looks really nice Eva. Sissi introduced me to coconut milk and now I always add some to my curry. It tames the heat and makes the sauce smooth. I didn’t know coconut powder existed. Always learning…

Thanks Zsuzsa, ahhh kocsonya, I used to love it when my mother made it. She always used the antique bowls we inherited from her mother (went through two world wars and a couple of their apartment bombings). A squeeze of fresh lemon, so delicious. Yes, I do believe the Naan would go well with it. I hope you try the recipe, I doubt I will buy Naan from the grocery store again.

Thai chicken curry is one of my all time favorite curries. Yours looks perfect and so easy to make. I’m intrigued by the coconut powder. Is that less fattening than canned light coconut milk or is there a taste/textural difference?

Thanks Jessica, you’ll have to be careful with the Naan, it contains glutenous flour. I doubt it would work out as well using non-glutenous flour because the draw of this bread is the chewiness.

This sounds delicious, Eva, is visually appealing, and so easy to prepare. It would make a great dinner and it just might be enough to convince me to try to make Naan again.
I need to find coconut milk powder. I tend to shy away from recipes that call for coconut milk because I don’t use it often enough to use whatever’s left in the can. A powder substitute would eliminate the waste. Do you have any suggestions where I might find some? Thanks.

Hi John, I buy my coconut milk powder in a plain ordinary grocery store with exception ethnic aisles, I think the brand is Mr. Gouda. You would likely find it in Asian markets if your grocery store doesn’t carry it.

Not your naans again… I suffer watching them… Your naans will break me one day and I’ll make them and eat most of them I guess.
Your chicken dish looks so soft and silky… I often make Indian-inspired dishes and they always end up good: how could coconut milk and curry taste bad? I always have some powdered coconut milk, but mine is strangely very high calorie (maybe it’s powdered coconut cream…) and I use it only in soups. On the other hand, I often dilute standard coconut milk with water trying to save on fat and calories…
We have had a particularly cold day today for my city’s climate (please don’t laugh!): -1°C (30°F?). It is usually above 0°C most of the winter. I have already forgotten what really cold winters mean…

I don’t make them myself, my Mom used to make a little extra bread dough and make them up as a special treat for us. My brother liked it with sugar, but I loved rubbing fresh garlic on mine, so delicious!
