You’re probably thinking “she’s gone mad” bacon and eggs for a Super Bowl appetizer? What could she possibly be thinking? Well, once you taste these babies, you’d wish you had made more of them. Just the perfect size to pop in your mouth (or for more delicate mouths, ehem, one may need two bites). I bought quail eggs for an appetizer for our friend’s Paul and T (post to come soon and I don’t want to spoil it) but I had a few of these gorgeous little eggs left over, so I came up with this breakfast for appetizer treat, and since Super Bowl is on Sunday, why not serve it to your discerning guests?
We spotted this sign walking up to a restaurant on Bloor for lunch last Sunday. Since this post had bacon in it, I thought it appropriate.
It’s really not a recipe, you can easily see all the ingredients, so I’ll just describe it. You’ll need 1 large slice of German seedy bread (we usually use this brand’s 7-Grain bread), 4 slices of Pancetta, sliced about 3.5 mm or 1/4 inch thick and four quail eggs.
First you want to fry the bacon until crispy, set aside in a warm oven, reserve bacon grease. Then cut four rounds of bread about 4-5 cm or 2.5 inches in diametre, and fry each side of the bread in the bacon fat until slightly toasted, but saturated in the bacon fat (you can hear your arteries bursting, no, wait, those are mine bursting), set aside and keep warm. In the remaining bacon fat, fry up each egg, trying to keep as circular shape as possible. Serve immediately, you want the yolks a little runny. To serve: take one slice of the bread round, put the bacon on top and then the egg, garnish with parsley or cilantro leaves. Serve with a napkin because you will have creamy yolk running down your chin.
They turned out so pretty, I had to take two photos.

Good thing I didn’t have these while watching the Super Bowl. I probably would have eaten so many that I would have gone comatose before the game. 🙂

Those are gorgeous little eggs in the shell Eva… they look like living art. Food can be so inspiring that way I find. Bacon is meat candy! LOVE IT! I love the look of quail eggs, but over here, they’re more expensive than chicken eggs and I’d need a lot more to for the same effect. Sourcing a local quail egg supplier would be ideal. My little sister was considering having them as pets at one stage but I wasn’t sure if they were the same kind of quail?

Quail eggs … your guests must be very special indeed. I love that your sunny side eggs have cooked tops. There’s nothing I dislike more than that runny white on top of the eggs if I do them this way. So I make them over easy and then overcook the yolks. 😦

I can hardly imagine anyone who wouldn’t go crazy for such appetisers! Using quail eggs this way is an excellent idea! We have recently quail eggs in many supermarkets here, they are cheap too, but as much as I find them cute, I’m protesting and not buying because I have never seen free-range (not to mention organic) and the idea of poor battery quails makes me lose my appetite.
Anyway, I will keep in mind this wonderful idea for when I find eggs from happy quails 😉

That’s interesting, Sissi, I assumed that the one’s I bought were free range because that is all this particular supermarket sells. I agree that normal poultry manufacturing (definitely not farming in my books) takes my appetite away as well. Have you seen the movie Food Inc.? It’s an interesting exposé of food manufacturing in the US.

Oh, yes, I have seen!!!! Horrible! I will never forget this film (though it’s on a lower scale and some laws are different in Europe, the mass meat production is widespread). I think everyone should be forced to see it because I know people who could afford free-range meat, but just don’t care. I don’t even do it for the taste (which as you know is much better) but for the sake of animals. As a big carnivore (by meat I mean mainly chicken) I feel better to minimise their suffering, even though it does cost me a lot money and efforts (especially to buy pork or turkey because chickens are everywhere). Luckily the more people buy organic, the cheaper it becomes. I hope to see quail eggs soon too!

These are perfect little bites, Eva. I must admit, though, that I’d have to buy a couple dozen quail eggs if any were to make it out of the kitchen to my football viewing friends. These would be just too easy to snack on in the kitchen. On second thought, I’d better have something else on hand to bring out to them. They won’t know what they missed. 🙂

Aren’t you sweet John, they are indeed quite irresistible, particularly with the bacon soaked bread and the crispy salty bacon. Because the eggs are so tiny, it’s easy to over cook (mine were just a hair overdone, but still a little runny). On a positive note, cooking up a couple of dozen is fast because they take up such little space in a frying pan. An alternative is to poach them, but I wanted the bang from the yolks in the picture.
It helps to have a helping hand in the kitchen to keep you honest, but then again, if it were me, Mum’s the word 😉

Hi Eva! This is great and quite fancy for a Super Bowl party, at least here in the UK it would be, since quail eggs are really expensive.
I’m sure you could replace the quail eggs with chicken eggs.

Hi Tudor, I picked up the quail eggs for $3.99 Canadian for 18 so it wasn’t terribly expensive. Chicken eggs, even the Grade A Small would be too large for this hors d’œurves. They were just so darn cute!
