Today I celebrate another benchmark birthday. All I could think of is, I can’t really be THAT age! But what the heck, like wine, we only get better with age, right? — that’s my story and I’m sticking to it.
JT organized a beautiful little cocktail party of our closest friends and family yesterday and it was lovely. Of course, I prepared a lot of the food and I’ll be posting about a few new things soon. In the meantime, here are a few great recipes from the Canada Day long weekend. Cheers!
I’ve mentioned before that our cottage is rather remote and we don’t have very good grocery stores close by, in fact the closest is about 45 minutes away and it takes about 20 minutes just to get out to the main highway to get there so planning is essential. Recently we had our lovely friends Rae and Monica up for the weekend and so I put together a great menu plan that allowed for reinventing left overs. One such left over was a combination of several of the meals that resulted in 4 fantastic flat breads that we used as hors d’œuvres on Sunday night. Each of these flatbreads are fantastic on their own, but the variety is also quite lovely. Plus, all of the ingredients are available ready made if you aren’t as fortunate to have left overs.
Quick and Easy Flat Bread Hors D’œuvres
Italian Delight: Gorgonzola, Parmesan and Parsley with Walnuts
Ingredients:
- 1 naan
- 1 oz gorgonzola
- 1 oz grated parmesan
- 2 tbsp chopped walnuts candied with balsamic
- 1 tbsp chopped flat leaf Italian Parsley
- 1 clove garlic
Directions:
- Peel the garlic and cut it in half. Rub one side of the naan with the cut side until it leaves the naan fragrant.
- Add cumbled gorgonzola and grated parmesan. Sprinkle with the candied walnuts. (To candy the walnuts, simply add the walnuts to a saucepan with about 2-4 tbsp of balsamic and boil until the balsamic has thickened, cool on parchment and break apart to use)
- BBQ until cheese has melted and then add the parsley. Cut into portions.
- Serve warm.
Mediterranean: Caramelized Onion, Roasted Red Peppers and Goats Cheese with Pine Nuts
Ingredients:
- 1 naan
- 1/2 a large caramelized onion
- 1/2 roasted red pepper, skin off, sliced reasonably thinly
- 3 tbsp crumbled goats cheese
- 1 tbsp toasted pine nuts
Directions:
- Evenly distribute the roasted red peppers on the top of the naan.
- Add the crumbled goats cheese and sprinkle with the pine nuts.
- BBQ until cheese has melted. Cut into portions.
- Serve warm.
Mexican: Salsa and Cilantro
Ingredients:
- 1 naan
- 1/2 cup salsa
- 2-4 tbsp chopped cilantro
Directions:
- Evenly distribute the salsa on the Naan.
- BBQ until warmed through. Cut into portions.
- Serve warm.
Greek: Red and Yellow Peppers, Green and Yellow Zuchinni, Kalamata olives and feta
Ingredients:
- 1 naan
- 1/4 cup greek yogurt with 1 garlic chopped into it
- 1/4 red pepper, sliced
- 1/4 yellow pepper, sliced
- Green and Yellow zucchini sliced
- 2 tbsp Kalamata olives, sliced
- 3 tbsp crumbled feta
- pinch of dry oregano
Directions:
- Spread the greek yogurt and garlic on the Naan.
- Lightly sauté the red, yellow peppers with the green and yellow zuchinni strips (not too soft)
- Evenly distribute the peppers and zuchinni on the top of the Naan, dot with the feta and Kalamata olives.
- Sprinkle the oregano evenly.
- BBQ until warmed through. Cut into portions.
- Serve warm.
I’ll leave you with two amazing shots of the sunset from two different nights. This is what makes the drive worth it!

Happy Birthday Eva – sorry I missed it… so much going on these days! Our wedding anniversary is soon, and then my wife’s birthday, and then my son’s birthday… ho-hum, a busy time of year!

Belated Happy Birthday once more! What a dream place to celebrate your birthday… (I understand now: this post has never appeared on your home page… sorry for my late visit). Luckily I have found it because all the naans look fantastic. You have just given me another big motivation to prepare your naans (I have never forgotten about them!). With all your creative toppings, I wouldn’t be afraid of eating the whole batch of naans (alone) on my own! I cannot believe it’s a way to use up leftovers. You are so clever!

I really enjoyed those sunset and paddling photographs, Eva, I couldn’t think of a better place to mark the passing of another special birthday! I always think in 10 years I’ll look back and wish I was.. er, of this age.. and so I might as well be happy that I am right now:D Love your recipes, you’re so clever to figure out a plan for leftovers, instead of them being a sort of “accident” that I wouldn’t know what to do with. Some day, I’ll plan like you.. my parents have to do this at their cabin, it’s a far distance out as well. But I guess that’s what makes a cabin a cabin:) Enjoy your day, hon, hope it’s the best!!!

Thank you do much for your lovely and flattering words Barbara. Necessity it the mother of invention! You make do with what you have, and I don’t like throwing away food (with so many of us, not even in third world countries, without a decent meal) so I invent ways to use up left overs! And I’ve had a lot of experience, so I usually just search my library to find the right recipe! It’s also a bit of a challenge you see, JT hates eating the same thing in a row, so I have to change it up!
It really was the best day, filled with the love of my friends and family, and of course my lovely blogging friends!

I went for store bought naan in the end due to time constraints and we made four different “pizzas”, including a “dessert” one, with sliced apples, whole blueberries, cinnamon, allspice, brown sugar and a little maple syrup (sounds super sweet, but because of the naan, really wasn’t), which was Rowan’s favourite. I also veganified your red pepper, onion and pine nut recipe (just didn’t add the cheese) and made your salsa one. They were awesome! And both Kevin and Rowan asked that we make these again soon. Thanks for creating and posting another recipe that’s going directly into our regular rotation of family dinners!

I am so glad to hear that Michela, you cannot imagine how happy it makes me to read your comments when your family loves one of my recipe ideas! I can just imagine how tasty that dessert pizza was — Villa in BWV has a fig pizza that they drizzle honey all over and it’s mouth watering, albeit, a bit sweet. If you do make the Naan from scratch, try inverting a cast iron pan on the BBQ to bake it on (I usually bake the naan first and then add the toppings and lay it flat on the grill). It really imitates the tandoori ovens quite well.

What a gorgeous view! Mike and have decided our next house (when the kids hit college) will be near water. 🙂 Your flatbreads look delicious!!! I wouldn’t know which one to pick. I’d have to sample them all. The one with caramelized onions and goat cheese might win me over though!
