Sourdough Buns

This recipe makes 17 buns about 60 g each.
Ingredients:
- 400 g Unbleached All-Purpose Flour
- 46 g milk powder
- 1 1/2 tsp salt
- 125 mL water
- 1 tbsp instant yeast
- 2 tbsp sugar
- 2 tbsp canola oil
- 1 egg
- 276 g sourdough starter, fed
- cornmeal (for dusting)
Directions:
- In the bowl of a stand mixer, combine flour, salt and milk powder and stir well to mix.
- In large glass measuring cup, combine water, yeast, sugar, oil and egg with the sourdough starter and mix thoroughly.
- Make a well in the centre of the flour mixture and pour the starter mixture into it. Mix with your dough hook attachment until the dough forms a ball and no longer sticks to the sides.
- Form into a smooth ball and oil exterior. Allow to rest for 1 hour.
- Press down and pinch about 60 g pieces and shape into even buns. Cut a small X on the top. Allow the buns to rest for 30 minutes.
- Pre-heat the oven to 375° F (190° C.
- Mist buns lightly with water and bake for 15-20 minutes or until internal temperature is 200° F).
- Allow to cool slightly. Serve warm.

Your sourdough buns are utterly adorable Eva. I hope you are enjoying a beautiful holiday. One of my brother’s sent me a photo of himself swimming in the lake on Christmas day! 17 degrees C in the Laurentians on the 25th. Really something. Meanwhile, it’s cold in CA! (well, cold is a relative term of course – but hovering around zero). Happiest of NY’s to you and JT.

These look fantastic, Eva. Even better knowing that they’re sourdough. They look like what I imagine my dinner rolls will look like when I pull them out of the oven. Unfortunately, they rarely live up to my expectations – the slackers!!! Now, rather than risk bad buns, I’ll bake a loaf and slice it at dinner time. Granted it’s not as pretty as your rolls but I seem to have better luck with it. Better still, by waiting until dinner to slice it, there’s no chance of me “tasting” a roll or two for quality control purposes. 🙂

Thank you for your lovely words John, the buns are indeed a risk for both JT and I so we know exactly what you mean. The rolls turned out much better than I expected even using my own starter, but I can’t wait to make it again using Celia’s starter from Australia, she was kind enough to send it to me again ever since someone murdered the previous one!
