Last week we posted the Arugula Paste (or Arugula Pesto for those of us less traditional) and you might have guessed that I would do something tasty with it. The paste ended up on a tilapia fillet with some sautéed vegetables on a bed of spinach. The dish got rave reviews even if the lighting sucks.
Tilapia Crusted with Arugula Paste
A KitchenInspirations Original Recipe
Serves 2
Ingredients:
- 60 g button mushrooms, cut in half
- 60 g radishes, cut into triangles
- 50 g yellow pepper, cut into cubes
- 50 g red pepper, cut into cubes
- 70 g eggplant, cut into cubes
- 70 g onion, chopped
- 60 g celery, cut into cubes
- 200 g tilapia fillet
- 2 cups spinach
- 1 tsp vegetable oil
- 1/4 cup arugula paste
Directions:
- Pre-heat the oven to 350° F (176° C). Place fish in the centre of a heart-shaped sheet of parchment paper. Spread about half of the arugula paste on top and close and fold the parchment en papillote style (please see note below).
- In the meantime, add 1 tsp vegetable oil to a sautée pan and sautée all of the vegetables until just crunchy. Toss with the remaining arugula paste.
- When fish has reached an internal temperature of 158° F (70° C)
- Serve hot on a bed of baby spinach topped with the fish and the sautéed vegetables.

(great hands by the way – and that thumb ring…) I sincerely hope that you do more of these including sharing your food recipes in this medium because you have a talent for recipe development and I think it would be a gorgeous way to showcase that.

Thank you so much for your kind, encouraging words Kelly, I am very flattered. Incidentally, that thumb ring came from a movie with Julie Roberts many, many years ago. It’s actually my Mom’s first wedding band, the second was a slightly more ornate gold band which I don’t wear any longer because it was engraved and most of it is smooth now!)
The video was fun to make and it’s so cool that iMovie is so easy to use that evan an amateur like me can make a half-decent video!

Arizona is still a few weeks away, but at least we haven’t been slammed with the snow that the Eastern Seaboard has had. It’s even mild here but the lack of sunshine is crippling.

Wow!!! Eva, my sincere congratulations! The video is just perfect! Quick, easy to understand and it’s such a pleasure to see your hands with nice bracelets and rings 🙂 I love pesto so much, I just have it with bread (then I feel very guilty…. so luckily my husband is quicker to finish it) so I can imagine how good it is with fish. This looks really good. I’ll bet the veggies would be great cooked inside the papillote with the fish and the pesto, too. Love that you served it atop spinach for some extra heft and healthy goodness.

Hi Betsy, the veggies would have been delicious in the papillote, I agree. We eat a lot of greens instead of starches so our bases are often spinach, kale, zucchini noodles and such. I know I adore them and JT just eats them because.
