I have no idea what happened to the original post, way back from 2011, but all that the blog post ended up with are some bad photos and no recipe! So here I will post this tasty recipe again, just in time for BBQ season down under! This marinade and BBQ sauce would be quite tasty on tofu or Seitan, we usually have it on chicken.
Did I ever recount the time I won a slow cooker from Chef Roger Mooking’s website? It was a New Years Eve contest, you were to depict a photo that describes your New Years Eve. Of course, I set up a shot using several booze bottles, a few undergarments, tools and a lamp shade! I won runner up but they sent me the same grand prize! Here’s the pic:

Chef Roger Mooking’s Chicken with Papaya BBQ Sauce

Papaya Marinade
- 30 mL coconut cream (from top of 1 can)
- Seeds of 1 large papaya
- 1 clove garlic, minced
- 5 g ginger, minced
- Zest and juice of 1 lime
- Zest and juice of 1 lemon
- 5 g cilantro stems, chopped
Papaya BBQ Sauce
- 15 mL vegetable oil
- 4 shallots, finely chopped
- 65 g coconut sugar
- zest and juice of 2 limes
- zest and juice of 1 lemon
- remaining coconut milk
- 125 mL rice wine vinegar
- 1 papaya, large dice
- 10 mL salt
Papaya seeds very well done. Some say there are digestive health benefits in Papaya Seed. They contain the enzyme papain, which is said to support a healthy digestive track. Papaya seeds are also thought to have an antibacterial effect on the digestive system. Evidently their good in BBQ sauce too. GREG

Indeed, we used to give our dear bunny pet Super Papaya pills to aid her digestion of her fur because bunnies groom a lot but are incapable of digestinytheir fur or throwing up like cats. And they love it!

Hmmm…. very intriguing. I rather like the idea of papaya marinade/sauce. Almost makes me want to uncover and fire up the bbq even in this rather chilly weather and pretend it’s summer again!

We Canadians grill all year round, well, maybe not during the thick of a snow storm but we designed our grill to be directly beside the back door to allow for it. Nothing better. Hope you give it a go too.

Haha, that’s quite the new year’s eve capture! I love that you were awarded the grand prize too! How great is that. I’ve never made a marinade with papaya but as I think about it, papain (enzyme in papaya) is great for digestion and breaking down protein so in addition to being super tasty, papaya would also make an excellent meat tenderizer ✌

Super Papaya enzyme was a pill we used to give to our bunny to help her digest her fur ftom constant grooming (they, like cats, groom a lot but unlike cats, they are vegetarians and cannot digest protein found in their fur and they are unable to vomit!). Thanks for your comment.

When I saw the New Year’s eve photo I was going on comment ‘that’s a LOT of booze”. I didn’t even see the undergarments and lampshade and then I had a DUH moment. I think you should have won first prize cause the subject of the winner sounds dull.
